Liquid preferment (fermented dough with yeast), stabilized with vinegar and salt for bakery creations. Poolish ready-to-use.
ADVANTAGES: It gives a wonderful fruity flavour and intense aroma with a mild sweetness. It guarantees inside with an open structure and crisp crust with a deep brown-red shade.
USE: Ideal for traditional breads, baguettes, ciabattas, delicious kneaded bread rolls and sweet doughs.
DOSAGE: Flexible dosage 5% – 10% flour base.
